Meal 1 Roast chicken
Serves 4 people prep time 10 minutes, cookingtime 1 hour.
- 1 stalk celery
- 1 3lb chicken
- 1/2 tsp thyme
- 1/2 tsp salt
- 1 tbsp butter softened divided
- 1 onion quartered.
- preheat oven to 475f. slice celery. sprinkle inside cavity with thyme and salt; add 1 tsp butter, sliced celery and onion. rub outside of chicken with left over butter
- tuck wing tips under back of chicken. Place chicken breast down on rack in roasting pan.
- Add enough water to cover bottom of pan. Roast for 10 minutes reduce temp to 375 cook for 20 minutes.
- Turn chicken breast side up. Roast until chicken is browned, about 30 minutes longer.
- to make gravy add 1 tbsp flour for each cup of pan juices. Cook over med high heat stirring until thickend.
best served with roasted potatoes
